Native Foods Cafe is Chef-Crafted and Chef Tanya certainly is a crafty lady! Because she is constantly experimenting in the kitchen and crafting up new culinary delights, it is only natural that the Native Foods Café Menu evolves seasonally to present her culinary masterpieces for everyone to enjoy! With the start of each new season, the weather starts to change, and so do the colors at the farmer’s market. Chef Tanya really wants each new menu to introduce something NEW to everyone, some new vegetables, roots, grains, legumes. For the Fall Menu, Chef Tanya is making sure to please everyone’s palate by introducing some AMAZING new dishes and also revamping some customer favorites.
Chef Tanya is introducing several NEW menu items on her Fall Menu. First off the Nuevo Native Nachos are out of this world! Homemade tortilla chips with black beans, Native Taco Meat, homemade Native Cashew Cheese, Chipotle Crema, Salsa Fresca and Guacamole. Chef Tanya reformulated the taco meat out of her Native Seitan with the perfect blend of Mexican seasonings. Unbelievable!
You can order cup of the Native Chili, which now features Chef Tanya's homemade Native Seitan, as a perfect appetizer on a chilly fall day or make a meal out of it with a Bowl. Fresh tomatoes, herbs and spices blended with our homemade Native Chili Meat and white beans and topped with Native Cheese and red onion. Served with our famous cornbread. The newest member to thesalad family is the Broccoli Curry Crunch Salad. Sweet, savory, salty, crunchy…. This salad has got it all! A bed of crisp romaine tossed with fresh apples and citrus vinaigrette and topped with a curried mixture of homemade seitan, crunchy broccoli, cashews and cranberries. Is your mouth watering yet?
One of Chef Tanya’s favorites is Verdi’s Roasted Veggie Pizza: an organic wheat artisan crust topped with herbed ricotta, sweet roasted fennel, plump pear tomatoes, peppers, red onions, roasted garlic and balsamic glaze. Oh my goodness!
The section of the menu entitled Chef Tanya’s Seasonal Selections is a force to be reckoned with! Chef Tanya crafted a monumental new veggie burger out of organic beans and quinoa, the gold of the Incas! Chef Tanya’s Original Wasabi Bean Burger is served on a whole grain bun with wasabi mayo, caramelized onions, lettuce, tomato slices, and fresh cucumber.
Next up is the Classic Deli Reuben: perfectly marinated Native Seitan shaved thin and piled high on warm grilled Rye with tangy Native Horseradish Cheese, mom’s original sauerkraut and creamy Russian dressing. Get ready folks! This just may be the most perfect Reuben EVER. Scratch that. THIS IS the most perfect Reuben EVER! I heart you Classic Deli Reuben.
And don’t worry; when you are ready to get your sizzle on, there is the Chimichurri Fajita Platter! Chef Tanya sears her Mexican Seitan with sweet peppers, onions, and tomatoes, in a homemade chimichurri sauce. She serves it with organic corn tortillas, brown rice, black beans, sliced avocado, sour cream and pico de gallo. Holy guacamole! That is a whole lotta bang for your buck.
