Broccoli is awesome. For real. We have all heard about all the great vitamins and minerals broccoli offers... and the loads of fiber... but what about just how plain delicious it is. Check out this fantastic fat-free recipe for broccoli as a side dish or a late night snack:
Roasted Broccoli
1 head broccoli
1/2 lemon (or a whole lemon for super lemony flavor)
Salt and pepper to taste
1) Preheat oven to 400 (or if its my oven, 450)
2) Wash and chop the broccoli into 1-inch pieces (or separate the florets into smaller pieces)
3) In a glass or aluminum baking pan, squeeze the lemon over the florets and toss all together with salt and pepper.
4) Bake in oven until crispy, but not burnt... about 20-30 minutes (depending on your oven, 30 in mine).
