Steamed Kale! My favorite green, and many others too apparently, as Whole Foods reported an insane jump in kale sales.... something like 60%! You can top it with anything, even serve it raw tossed with some olive oil, lemon juice, salt and your favorite nut, like walnuts. I love to lightly steam it and squeeze a whole lemon on top then sprinkle with gomasio, like the way we serve it at Native Foods Cafe! But lately Red Curry Kale has been my jam... Sautee some ginger, garlic, lemongrass & red chiles until nice and soft then add a few tablespoons of red curry paste. Add a can of coconut milk and let simmer and reduce just a bit. Add in some fresh cilantro at the end... and voila! Serve over lightly steamed kale and sprinkle with some black gomasio... Super Sunday Snack served.
