While I do prefer preparing dishes from scratch, I have to admit I get excited when I see packaged items that can be made really easily... and vegan to boot! I found this packaged carrot cake mix the other day by Simply Organic, so I decided to give it a whirl. First of all, I was impressed that all you needed was water and these three ingredients: the boxed mix, grated carrots and applesauce. (And it is gluten-free too.)
Secondly, the back even tells you how to make it vegan... so you don't have to employ your vegan baking wizardry and substitute ingredients, all along knowing that it could end up being a disaster.
Mix it up, and pour into the baking dish.
And then after about 50 minutes or so, you have warm delicious carrot cake. The texture is a bit different, due to the gluten-free element I imagine. But nevertheless, excellent. Almost like a warm carrot bread pudding cake. I topped with Vanilla Island Coconut Ice Cream by Larry & Luna's (my favorite) and some cinnamon.
