Happy National S'mores Day!
What a glorious day it is. Celebrating an ingenious dessert invention of gooey, crispy toasted marshmallows & melted chocolate between two crisp cookies is a wonderful way to spend the day, or evening... or the middle of the night. You don't even need a campfire anymore. I just turn on my gas stove or pull out my blow torch and start roasting marshmallows. And with amazing vegan marshmallows like Dandies from Chicago Vegan Foods and Sweet & Sara, who needs (or wants) cow-hoof-infused mallows? Not me. For the s'mores pictured below I used some Amaranth Cookies I found at Whole Foods, but Sweet & Sara makes a delicious vegan graham cracker... and Nabisco Original Graham Crackers made the PETA Accidentally Vegan List... so you have options! Find a nice vegan chocolate bar (I like mine with a little sea salt) and you are good to go.

AHHH YES! S'mores are my FAVORITE dessert ever! I am so glad you guys posted this because I totally would have not known about this glorious holiday!
