Ideally, you are making your own exquisite homemade vegetable broth from your local farmer's market haul... or better yet, your backyard garden. But this isn't always feasible with busy schedules, families, and all the other stuff that makes up the day. So it is a good idea to keep a veggie broth in the pantry for impromptu soups, stews, gravies, seitan and so on. My favorite vegan broth is Rapunzel Vegetable Bouillon with Sea Salt & Herbs. It is delicious. I even like to sip it on its own. Plus, it is compact (as it comes in cubes) and you can find it in alot of stores, and online. Be warned: it is on the salty side.... so you probably do not need to add any salt to the dish... unless you are a salty individual. Tee hee hee.
