There are many ways to celebrate this delectable leafy green. So let me count the ways…
#1- Swing on into your local farmers market and pick up a bunch... or two! Give them a rinse, remove the stem and roughly chop them. Give them a quick 2 to 3 minute bath in some boiling hot water and squeeze a little lemon over it. Yummm..

#2- Grab a healthy snack with some Kale Chips. There are TONS of brands out there these days but I recommend Brad’s –Vampire Killer or Vegan Cheesy Goodness.

Or try out Alive Radiant brand with the Southwest Ranch or Hibiscus and Pink peppercorn flavors!

#3- Stop on in to Native Foods and enjoy the Caribbean Jerk Kale Salad. You can’t go wrong with jerk seasoned Native tempeh, creamy avocado, chopped fresh mango, red peppers and onions with crunchy massaged kale tossed in a jalapeno cilantro dressing. I think I may head over there now!
#4- Make Kale and honey crisp juice like I did! Tis the apple season and man do I love my juicer. Put two and two together and make magic!
Recipe for success:
3 bunches of Kale
6 whole Honey crisp apples
½ inch peeled piece of ginger
¼ of a lemon
-Toss them one by one in the juicer, chill and enjoy!
#5- Sign a petition for the US government to make Kale Day an official national holiday. It’s true!! Check it out!
#6- Represent! Wear green from your head to your toes! Perhaps like Gaga…
