I recently returned from another amazing experience at the Culinary Institute in St. Helena, California. I attended a conference hosted by Avocados From Mexico and I have returned with a renewed love and culinary obsession with a fruit that has forever been a favorite of mine. Some fun facts about avocados;
*Avocados act as a “nutrient booster” and help the body digest nutrients from the foods that are eaten with it, so not only does it taste amazing with so many things, but it will help your body process them all!
* A 1 oz serving of avocado has 50 calories and contributes nearly 20 vitamins and minerals, making it an incredibly nourishing, nutrient rich food
*We always hear that Avocados contain ‘good fat’ but what does that really mean? Over 75% of the fat in avocados is unsaturated (monounsaturated and polyunsaturated fats), so they are a great substitute for foods high in saturated fats, and did I mention they taste amazing? In everything?!
One of the awesome and inspiring things we did at the conference was break up into teams and create innovative recipes using avocados. I am sharing one here tomorrow. with you that is vegan, super creative and incredibly delicious. You can thank me later!
