Mark Twain once said, "Cauliflower is nothing but cabbage with a college education." Cauliflower has often been thought of as the lame vegetable of the cruciferous family, home to the more popular broccoli, but actually cauliflower is an awesome veggie.
Cauliflower is not only verstalile but also very nutitrious! You really should be getting about 2-3 servings of cruciferous vegetables a day and cauliflower is a great one to add into your veggie repertoire. As far as the health benefits are concerned cauliflower is:

7) Cardiovascular and Cerebrovascular
Aside from the health benefits, it is delicious! There are so many wonderful things you can make using cauliflower. One of my personal favorites is using it in place of potatoes for a good mash. The texture isn't as hearty but the flavors prevail and it is a healthier alternative.
I use one head of cauliflower and some unsweetened soy milk, vegan butter, fresh garlic and salt to make a creamy purree that is the excellent compliment to any summer meal. I first chop the head into smaller chunks and steam it for a few minutes so it is not only hot but soft. I then place in the blender and I add the soy milk slowly until the texture is right, you can leave it more like a mash or blend it down to a puree, it is your choice! Throw in a teaspoon of garlic and a tablespoon of vegan butter then salt to taste.
I was at my friends one night and she was replicating "hot wings" we had out one night. You know what she used? (I bet you see the theme here by now.) Sure enough, she used roasted califlower, some hot sauce and vegan ranch...and they were a hit for everyone at the party!
So it is no real surpise that here at Native Foods we wanted to embrace this rad vegetable and use it as the star in our latest Special Meal....the Cauliflower Power Sub!
